The name "Azu in Tatar" already indicates that this dish belongs to the Tatar national cuisine. It is usually cooked in pots using meat and vegetables as ingredients; most often they use beef, horse meat or lamb. According to generally accepted regulatory and technological documents (recipes, technological maps) and recipes of the Tatar cuisine, potatoes, tomatoes and pickles are most often preferred from vegetables, garlic is added.

Instructions
Step 1
Cut the meat across the grain at a right angle or 45 degrees to make the pieces look good. Chopped meat must be beaten off with a hammer, previously soaked in cold water, and cut into cubes weighing 10-15 g and 1-1.5 cm thick. Prepared meat must be salted, sprinkled with pepper and fried until golden brown.
Step 2
Cut off the bottom of onions and remove dry scales. Cut the onion into half rings or slices and sauté for 5-7 minutes over medium heat until half cooked.
Step 3
Peel the pickled cucumbers, if they are very coarse, and cut into strips. Then fry them for 5-7 minutes, also over medium heat.
Step 4
Wash potatoes and tomatoes and peel them off. Cut vegetables into cubes or slices, fry for 5-7 minutes over medium heat, separately.
Step 5
Peel the bell pepper and cut into strips, fry over medium heat.
Step 6
Pour the fried meat with boiling water and simmer until tender at a low boil for 1-1, 5 hours with the addition of bay leaves.
Step 7
The broth, which was used for stewing meat, then participates in the preparation of the sauce. The flour should be sautéed over medium heat without oil, stirring constantly until it turns light brown. When the flour has cooled slightly, it should be diluted with warm broth, first in a small amount, then mixed with the remaining broth. Add prepared cucumbers, onions, salt to the broth with flour and cook for 45 minutes.
Step 8
Put fried potatoes and bell peppers at the bottom of the pot, then the stew, pour the resulting sauce with vegetables, add the tomatoes and simmer for 15-20 minutes in the oven. Season the finished dish with crushed garlic.
