At the beginning of Shrovetide week, it's time to choose those pancake dishes with which you will delight your loved ones. If the classic fillings are a little bored, you can try something new, for example, pancakes with chocolate or a pancake-curd casserole with raisins. It will not be difficult to prepare them, and the result will surely please.
Basic Pancake Dough Recipe
Ingredients:
- 300 ml of milk;
- 100 g wheat flour;
- 1 chicken egg;
- a pinch of salt;
- vegetable oil.
Preparation:
1. Sift flour into a bowl, mix it with fine salt. In the very center, make a depression and insert a chicken egg there.
2. Gently pour in the milk while kneading the dough. Stir to keep as few lumps as possible. Then cover the dish with a lid or a clean cotton towel and let sit at room temperature for 20 minutes.
3. In a small amount of sunflower oil, bake thin pancakes - they are cooked almost instantly. Place in a stack on a plate, cover with cling foil to keep warm.
Pancakes with chocolate
Ingredients:
- 5 pancakes according to the main recipe;
- 50-60 g milk chocolate.
Preparation:
1. Bake pancakes according to the basic recipe. Divide the chocolate into pieces and chop coarsely with a knife. Place some chocolate on each pancake and fold in four.
2. Now fry each folded pancake in a skillet with the remaining vegetable oil on one side and on the other to melt the chocolate inside. Serve immediately.
Pancake and curd casserole
Ingredients:
- 15-16 pancakes prepared according to the main recipe;
- 400 g of cottage cheese with a fat content of 5%;
- 100 g pitted dark raisins;
- 100 g sour cream, 15% fat;
- 3 chicken eggs;
- sugar to taste.
Preparation:
1. First prepare the curd filling. To do this, mix cottage cheese, granulated sugar and one chicken egg. Rub the mixture thoroughly until smooth.
2. Rinse the raisins well, scald with boiling water if desired. Let it dry in a colander, then add to the curd filling and stir.
3. Prepare the filling, for this, in a separate container, mix 2 eggs and sour cream, beat until smooth with a whisk.
4. Prepare pancakes according to the basic recipe. Put a tablespoon of curd mass on each pancake and roll it up.
5. Grease an ovenproof dish with high sides with sunflower oil. Arrange the spring rolls in two layers, close enough to each other.
6. Pour the sour cream-egg mass on top of the pancake tubes. Place the dish in an oven preheated to 190 ° C and bake for 30-35 minutes until a delicious golden crust appears.
7. Take out the prepared casserole, place the dish on a wooden board. Let the food harden and set a little.
8. Then cut into portions and serve. The pancake casserole can be eaten cold or warm.
