Potato pancakes can only be made from potatoes. But the dish turns out to be especially tasty if it contains other ingredients, for example, chicken, cottage cheese, etc. Therefore, today we will discuss two interesting recipes for making potato pancakes.

Potato pancakes with chicken

This recipe will appeal even to those gourmets who do not like potato pancakes. Meat and vegetables are very harmoniously combined with each other, so the dish can be an independent dish on the table. And if you make a salad of cucumbers and tomatoes, then you don't need to puzzle over what kind of dinner to feed your family.

To make potato and chicken pancakes, take:

  • 6 large potatoes;
  • 1 chicken breast;
  • 1 head of onion;
  • 3 cloves of garlic;
  • 2 chicken eggs;
  • 2 tbsp. l. mayonnaise;
  • Salt and spices optional.

The sequence of cooking potato pancakes is as follows:

  1. Rinse the meat thoroughly, dry it a little, cut the breast into small thin plates, sprinkle with salt and spices, leave to stand for 5 minutes.
  2. Wash the potatoes, remove the peel. Take a deep plate, pour cold water into it and grate the potatoes on a coarse shredder directly into the liquid. Such a trick is needed so that the vegetable does not darken and has a beautiful color during cooking.
  3. Rinse the grated potatoes in water, drain the liquid. Lightly salt the vegetable and leave to stand for 2-3 minutes. During this time, the potatoes will give away excess juice, drain it.
  4. Put the prepared meat in a bowl with the potatoes, beat in the eggs, add mayonnaise, garlic passed through a press, peeled and chopped onions. Stir all ingredients thoroughly.
  5. Preheat a skillet, pour vegetable oil over it and spoon the potato pancake dough with a tablespoon. Fry the blanks on both sides until golden brown.
  6. Serve ready-made potato pancakes warm. Fresh and canned vegetables go well with the dish.

Potato pancakes prepared according to this recipe can be an independent dish and are suitable for a snack, for example, at work.

Potato pancakes with cottage cheese

Potato pancakes prepared according to the recipe that will be described below are very popular with children. The dish turns out to be delicate in taste and goes well with sour cream.

To make potato pancakes, stock up on the following foods:

  • 1 kg of potatoes;
  • 300 g of cottage cheese;
  • 2 chicken eggs;
  • 1 head of onion (if you cook for a child, then you do not need to add the onion);
  • Spices to taste;
  • Vegetable oil for frying.

To prepare delicious and aromatic potato pancakes, proceed as follows:

  1. Wash the potatoes, peel them. Now you need to chop the root crop. This can be done in two ways: grate the potatoes or process with a blender (when using it, potato pancakes are very airy, tender).
  2. If you add onion to the dish, then peel it and chop it in any convenient way.
  3. Combine the onion and potatoes, put the mixture on cheesecloth, let the excess liquid drain.
  4. Transfer the potato and onion mixture to a convenient container, add cottage cheese, egg, salt and spices to taste. Stir the dough, you get a porridge of medium density.
