The hostesses bake yeast and custard pancakes, from wheat and buckwheat, oat and rye flour, with and without baking, served with spreads and fillings. - - 3 glasses of flour;

Step 1
Pancakes on kefir
Remove the eggs in advance so that they have time to reach room temperature. Boil the water. Beat the eggs lightly with a whisk, fork or mixer, pour in kefir, add flour sifted with salt in a thin stream. If you want to serve the pancakes with a sweet filling, add some sugar.
Step 2
Add soda to boiling water, mix. Pour the baking soda solution into the dough, knead it and let stand for 5 minutes in a warm place. Bubbles should appear on the surface of the dough. Add vegetable oil last to the pancake dough.
Step 3
Fry the pancakes in a well-heated cast iron skillet. They will turn out to be light and delicate.
Step 4
Custard pancakes with whey
Warm the serum to room temperature. Add salt, soda, if the pancakes are sweet, 2-3 tablespoons of sugar, slightly beaten eggs, vegetable oil. Stir and beat lightly with a mixer or whisk.
Step 5
Add the sifted flour and knead to a thick, smooth dough similar in consistency to sour cream.
Bring milk to a boil. Pour it in a thin stream into the pancake dough, remembering to stir it. Cover the bowl of dough with a clean linen towel and let sit at room temperature for 20-30 minutes.
Step 6
Fry the pancakes in a well-heated, heavy skillet. Before each pancake, lightly grease the skillet with a piece of butter.
