Shrovetide is in full swing. There are no recipes for pancakes. And on kefir, and on milk, and on water. Thin and thick, small and large. Large selection and variety. But how to cook those same delicate pancakes with holes?
It is necessary
- Eggs - 2 pcs.
- Milk - 335-350 ml.
- Sugar - 7 gr.

- Mineral water - 225-250 ml.
- Vegetable oil - 20-30 ml.
- Flour - 2 cups

Step 1
First you need to mix eggs, sugar and salt. Whisk thoroughly until smooth so that the sugar and salt are completely dissolved. If possible, purchase eggs from private farms or from rural ones. They will make pancakes brighter and more saturated in color.
It is very convenient to beat the mixture with a mixer - a nozzle with whisk. Or in a blender. You can do it with a fork, as our mothers and grandmothers did, but then it will take longer.
Step 2
Pour in milk gradually to the resulting mixture. Stir until smooth. Milk should be at room temperature, but not cold.
It is important that the milk has a high fat content (3-4%); on skim and low-fat milk, pancakes will turn out pale and not so dense in structure. Vegetable milk (oat, coconut) is also not suitable. Such milk has different properties and imparts different characteristics to baked goods.
Step 3
Add flour in portions, do not rush, beat the dough thoroughly so that there are no lumps.
To begin with, you can add 50 grams of flour so that the mass is evenly distributed.
It is convenient to do this with a whisk or mixer at low speed.
Then gradually add the rest of the flour to the mass. watch out for the consistency, do not overdo it with flour.
Step 4
Add vegetable oil and soda water. The water should not be salty or sweet, and no colorant should be added to it. It is also better to take just sparkling water, not mineral water. Some types of mineral water have a special flavor that will spoil the taste of the pancakes.
Mix everything again, achieving a homogeneous consistency.
Step 5
Preheat a pancake pan. Ideal if the pan is non-stick. Lubricate it with a small amount of vegetable oil before baking the first pancake, then this is not required, since there is already oil in the dough. Pour the dough with a ladle, quickly spreading it over the pan. Serve hot.
