To make homemade liver burgers, you will need the following foods. For the dough: 300 ml of milk, 2 eggs, 600 g of flour, 60 g of sugar, 2 tbsp. drain. oils, sesame seeds, 1 tsp. dry yeast. For the filling: 250 g of beef liver, 1 tomato, 700 g of beef, 2 pickles, 1 tbsp. milk, 10 lettuce leaves, 1 tsp mustard, 3 tbsp. sour cream, 2 tbsp. plum oil, pepper, salt, 3 tbsp. tomato ketchup, 2 onions. Make a dough. Combine warm milk, yeast, and sugar in a bowl. Place the bowl in a warm place for 15 minutes. Then add butter, beaten eggs. Sieve flour through a sieve into a bowl of mixture and replace the dough. Cover it with a towel and let it sit for 1.5 hours. While the dough is rising, add the filling. Cut the prepared beef and beef liver into small pieces and scroll through a meat grinder. Stir the minced meat, pour in the milk and form into neat flat patties. Heat a skillet with vegetable oil and fry them over high heat on both sides. Combine mustard, sour cream, and ketchup in a bowl. Cut pickles, tomatoes, peeled onions into slices.
You can make "diet" cutlets (no crust). To do this, add water to the skillet and simmer them over low heat.
Knead the dough, let it rise again. Then cut it into equal pieces and shape into buns. Put them on a baking sheet, sprinkle with sesame seeds and place in an oven preheated to 200 ° C for 40 minutes. Chill the buns and cut them in half (lengthwise). Make burgers. Place green lettuce sheets on the bottom half of the buns and a cutlet on top. Place a circle of tomato, onion and a slice of pickled cucumber on it. Pour the sauce and cover with the other half of the bun. Place the burgers on a plate and serve.
You can make liver burgers without using beef. For the filling you will need: 450 g of beef liver, 60 g of flour flour, 1 onion, 1 pickled cucumber, 2 tbsp. l. fried sunflower seeds, 60 ml tbsp. vegetable oil, green salad leaves, 80 g of mayonnaise, 170 g of cheese, 1 bunch of dill, salt, pepper. Soak the liver, remove the film, rinse the offal. Cut it into small pieces and grind it in a meat grinder. Add salt, flour, pepper to the resulting minced meat and mix. Divide the liver mass into equal parts, form cutlets. Heat a skillet with oil and fry them over medium heat on both sides.
Liver patties for burgers should not be overcooked and dry.
Slice the onion into rings and the cucumber and cheese into slices. Slice the warm rolls lengthways. Spread the lower halves with mayonnaise, sprinkle with peeled sunflower seeds, top with dill, cheese, salad, liver cutlets, pieces of pickled cucumber and onion rings. Cover with top buns, place on a platter and serve. In cafes, restaurants, burgers are traditionally served with French fries. For homemade hamburgers, you can make vegetable, potato salads, cabbage salad, baby corn, boiled on the cob.
