A ready-made dressing for soup will significantly save cooking time, as well as family finances, because vegetables are quite expensive in winter. And this dressing is perfect as an addition to meat, cereals and pasta.
Ingredients for Soup Dressing:
- 2 kg of fresh juicy carrots;
- 2 kg of white onions;
- 2 kg of homemade bell pepper;
- 200-230 ml of tomato paste or sauce;
- a glass of sugar;
- a glass of 9% table vinegar;
- 250-300 ml of sunflower oil;
- 2-2.5 large spoons of salt.
Cooking a dressing for soup for the winter:
1. Wash and peel vegetables if necessary. Peel the carrots with a vegetable peeler, remove the partitions with seeds from the pepper, remove the husks from the onions.
2. The next step is to choose how to grind all vegetables. You can simply cut everything into strips of the desired size, and if possible, you can use a food processor or grater and vegetable cutter.
3. All prepared vegetables should be combined in a large cooking pot.
4. Put the tomato paste in a separate bowl, add about 1.5-2 liters of water, as well as vinegar, oil, sugar and salt. Mix everything well and pour this mixture over the vegetables.
5. Place the container with the dressing on medium heat and cook for 30-45 minutes, so that all vegetables are soft and not crunchy.
6. At this time, you need to wash small jars (up to 0.5 liters) and sterilize them in the microwave or oven. You should not forget about the covers either, they also need to be sterilized.
7. Immediately put the prepared soup dressing in jars and, rolling up, turn it upside down.
8. Wrap all the jars with a thick cloth (blanket, towels, tablecloth) and leave to cool.
