Delicate and tasty mashed potatoes with stewed vegetables can be a healthy dinner for both adults and children. For a pleasant aroma, seasonings and garlic can be added to vegetables, and a few tablespoons of sour cream for a delicate creamy aftertaste.

Step 1
Rinse the eggplants and pat dry with a paper towel. Cut each eggplant in half, remove the seeds and sprinkle each half with salt. Leave it on for 10-15 minutes. Then, rinse the eggplants and wrap them in a paper towel to absorb all the moisture. Cut the eggplants into small cubes. Rinse the squash under water and pat dry with a towel. Cut into small cubes.
Step 2
Pour boiling water over the tomato, remove the skin and cut into semicircles. Peel the onions and cut into rings. Cut the washed and peeled carrots into circles or semicircles, depending on the size of the root crop. Rinse bell peppers under water, cut in half, core with seeds and cut into strips.
Step 3
Place a dry, deep skillet over the heat and place the chopped eggplants on top of it. Fry them for 5 minutes, stirring occasionally, until the moisture evaporates. Then add 2-3 tablespoons of sunflower oil and add onions, peppers, zucchini, carrots and tomatoes to the eggplants. Salt. Cover the skillet with a lid and simmer the vegetables over medium heat. Add sour cream, minced garlic clove, seasoning to taste, and fresh chopped herbs (parsley or cilantro) 5 minutes before stewing ends. Remove cooked vegetables from heat.
Step 4
Make mashed potatoes. Rinse the potatoes under running water, peel and place in a saucepan. Cover with hot water and put on fire. After boiling, add salt and cook the potatoes over medium heat until cooked through. Then drain all the water and crush the potatoes. Add a lump of butter and hot boiled milk, mix thoroughly and beat with a mixer or blender until an airy and homogeneous puree is formed.
Step 5
Place the mashed potatoes in a heap on a serving plate and make a depression in the center. Put a few tablespoons of stewed vegetables in it. Garnish with slices of fresh cucumber or lettuce. Bon Appetit.
