Still dislike rice porridge? But in vain! Of course, empty unleavened rice will not inspire anyone, but fragrant delicate creamy porridge under a caramel crust … It's a completely different matter!
It is necessary
- - 50 g of round rice;
- - 200 ml heavy cream;
- - 300 ml of whole milk;
- - 40 g sugar + fine granulated sugar for caramel;
- - 1 tsp vanilla extract.

Step 1
To prevent our pudding from coming out too thick, start by rinsing the rice with cold water to get rid of excess starch. Then mix milk with vanilla, cream and sugar in a saucepan, pour rice into it and put on moderate heat. We are waiting for a boil.
Step 2
As soon as the contents of the pot have boiled, reduce the heat to low and cook for about half an hour, remembering to stir so that the rice does not burn to the bottom of the pot.
Step 3
Preheat the oven to 150 degrees. We transfer the contents of the pan to a fireproof form and send it to the oven for 40 minutes. Then we turn off the oven and, without opening the door, we cool our dessert for an hour.
Step 4
Sprinkle the top of the pudding with granulated sugar and place under a preheated grill until a caramel crust is formed. We take it out and let it stand at room temperature for at least half an hour to form the structure. Serve with fruit jam.
