    • 0.5 tbsp. granulated sugar

    • zest of one lemon

Step 1

For rice pudding, take half of the milk you need - one glass - and pour it into an enamel saucepan. Pour the pre-washed rice into boiling milk and cook until tender. Of course, after the milk and rice boil again, the fire must be reduced to a minimum.

Step 2

Remember to stir the rice from time to time while the rice is cooking. Prepare the raisins at the same time. Rinse it thoroughly under running hot water and pour boiling water into a bowl.

Step 3

In a separate bowl, beat eggs with sugar, add vanilla and lemon zest. Lemon zest is prepared in advance - the thinly cut peel is dried and minced in a meat grinder. If you don't have lemon zest, just grate a well-washed lemon on a fine grater. Try to only remove the yellow skin.

Step 4

Put beaten eggs with sugar, vanilla and grated lemon zest into a saucepan with cooked rice. Drain the soaked raisins and add them to the rice as well. With the remaining glass of milk, dilute the resulting mixture, mix well and continue to cook your pudding for about 10 minutes more.

Arrange the finished pudding on plates.

Step 5

This is, so to speak, an adapted version of the preparation of rice pudding. Cooking classic English rice pudding needs a little differently. It is baked in the oven.

First, the milk mixture is prepared. 900 ml of milk, 100 g of sugar, 600 ml of cream and lemon zest are slowly heated in a saucepan on the stove with constant stirring until the sugar is completely dissolved. Then the mixture is brought to a boil.

In a refractory dish, combine the milk mixture with 150 grams of rice. Ideally, a special dessert rice is needed. Sprinkle the surface of the future rice pudding with grated nutmeg and place a piece of butter in the center.

Bake the rice pudding in the oven at 170 degrees in two portions of 45 minutes. After the first 45 minutes, stir the pudding. The pudding is ready when the rice has absorbed all the liquid. It can be served hot or cold.
