The traditional cold soup gazpacho is made with tomatoes, but experiment with cucumbers for a delicious and refreshing soup!
It is necessary
- For 8 servings:
- - 2 avocados;
- - 2 glasses of water;
- - 2 tbsp. freshly squeezed lemon juice;
- - 2 heads of onions;
- - 4 things. cucumber;
- - 4 tablespoons olive oil;
- - 1 bunch of parsley;
- - 2 sweet green peppers;
- - 2 large cloves of garlic;
- - 2 tsp salt;
- - black pepper to taste.
Instructions
Step 1
Wash the cucumbers, cut them in two and remove the seeds with a regular teaspoon. If the skin of vegetables is very rough and has a bitter taste, it must also be removed. Then chop the cucumbers into small pieces and place them in the bowl of a food processor.
Step 2
Wash the onion and garlic, peel and chop finely. Remove the seeds from the pepper and also chop it into a cube with a knife. We send vegetables to cucumbers and chop.
Step 3
Wash the avocado, cut it in two and remove the bone. Using a spoon, carefully scrape out all the pulp and send it to the bowl of the food processor.
Step 4
Finely chop the parsley and send it to the rest of the ingredients. Add a little olive oil and beat until the mixture looks like a coarse puree. Then add two glasses of water, lemon juice and salt and beat again, now until puree. We try to see if there is enough salt and lemon juice, pepper to taste and serve! Moreover, you can pour the soup into plates right away, or you can let it brew a little in the refrigerator - it will be even tastier!
