  • - 100 g cabbage
  • - 180 g potatoes
  • - half carrots
  • - 80 g onions
  • - parsley root
  • - 60 g pickles
  • - 20 g celery root
  • - 20 g ghee
  • - 20 g sour cream
  • - greens
  • - brine
  • - ground pepper
  • - Bay leaf
  • - salt

Step 1

We will cook the pickle in an enamel pan. Pour a liter of water into it and immerse the meat. We put on the stove, turn on the fire, bring to a boil, remove the resulting foam with a slotted spoon, reduce the heat and cook the beef until tender. Remove the cooked meat from the broth and set it aside.

Step 2

Next, clean the carrots and onions. Cut carrots into strips, onions into cubes. We heat a frying pan on the stove and sauté the prepared vegetables in vegetable oil.

Step 3

Wash and peel the potatoes, then dice them as usual for soup. Chop fresh cabbage as thin as possible, cut the roots of celery and parsley into strips. Carefully remove the skin from the pickled cucumbers, then cut them obliquely into slices and pour over boiling water.

Step 4

Strain the boiled broth, then put it on the fire and when it boils, throw chopped fresh cabbage into the pan. After the broth boils again, add celery and parsley roots to the cabbage, as well as the potatoes cut into cubes.

Step 5

After the vegetables have boiled in the broth for about five minutes, add fried carrots with onions and pickles to the soup. We also add spices. Leave the soup to simmer over low heat until tender.

Step 6

Boil the cucumber pickle and add it to the soup when it is completely cooked.
