Step 1

Rinse the liver in cold running water. Any liver is suitable for making a liver cake - beef, pork, chicken, turkey. The liver should be tight, even at the cut, not too dark. Peel the liver films, remove the bile ducts and cut into pieces. Scroll the liver through a meat grinder or grind in a blender. The finer it is rubbed, the softer the cakes will be.

Step 2

Add eggs and milk to the minced meat. Pepper and salt, stir. Add flour gradually, stirring constantly. The dough should be smooth, similar in thickness to pancake dough.

Heat vegetable oil in a skillet. Spread the dough out with a large spoon and spread so that it covers the entire bottom of the pan. Bake for 2-3 minutes, then turn over to the other side and leave for a couple of minutes. Bake the rest of the cakes in the same way. Add oil as needed. From the specified amount of ingredients, about 10-12 pancakes with a diameter of 20 cm are obtained.

Peel the onions and carrots. Finely chop the onions, grate the carrots. Fry vegetables until golden brown. Wash the mushrooms, cut into medium-sized cubes and fry until tender. Combine mushrooms, onions and carrots. Drain excess oil. Pass the garlic through a garlic press and combine with mayonnaise. Finely chop the dill and parsley.

Collect the cake. Liver crust with a thin layer of mayonnaise with garlic. Put the filling on it, and then sprinkle with herbs. Cover with a second crust and press lightly. Layer all the cakes with the filling. Spread the top pancake with mayonnaise and garnish as desired - herbs, chopped egg yolk, grated cheese, canned corn.
