Spicy carrot muffins are not only a very original and tasty dish, but also a healthy delicacy. Ginger has long been appreciated for its beneficial properties, and cinnamon gives a spicy aroma to baked goods.

- - 4-5 small carrots
 - - ground cinnamon
 - - ground ginger
 - - ground nutmeg
 - - baking powder
 - - 2 tbsp. wheat flour
 - - 1 tbsp. Sahara
 - - vanilla sugar or icing sugar
 - - salt
 - - vegetable oil
 - - butter
 
Instructions
Step 1
Grate the carrots on a fine or coarse grater. In one bowl, combine flour, baking powder, cinnamon, ginger and nutmeg powder. Season to taste. The amount of spices should not exceed half a teaspoon, it is better to add not too much of them.
Step 2
Mix the resulting mass with chopped carrots and beat with a mixer. If necessary, dilute the dough with the required amount of water. Add eggs and a glass of sugar while cooking. The dough should be the consistency of thick sour cream.
Step 3
Fill the muffin tins halfway with carrot dough and place in the preheated oven. Pre-grease the molds with vegetable or butter. Bake carrot muffins for 20-25 minutes.
Step 4
Chill ready-made muffins for an hour before serving and garnish with powdered sugar. Optionally, add whole nuts and raisins to the ingredients.
