What should be the perfect breakfast? Of course, tasty and healthy! And this recipe more than satisfies both points!
It is necessary
- The foundation:
- - 120 g of long-cooked oatmeal;
- - 100 g whole grain flour;
- - 60 g of your favorite nuts;
- - 120 g of water;
- - 2 tbsp. liquid honey;
- - 1 tsp cinnamon;
- - a pinch of vanillin.
- Curd cream:
- - 300 g baked pumpkin;
- - 200 g of low-fat cottage cheese;
- - 1 orange.
Instructions
Step 1
Use a food processor or coffee grinder to turn oatmeal and nuts into small crumbs. Sift the flour with a pinch of vanilla and a teaspoon of cinnamon, mix with the oatmeal mixture.
Step 2
Warm the water slightly and dissolve a tablespoon of honey with it. Mix with dry ingredients and knead the dough. It will be pleasant to work with: quite elastic, it will easily roll out.
Step 3
Preheat the oven to 170 degrees and line the baking sheet with baking paper. Roll out the dough and cut out of it using a glass or cookie cutter. Place them on a baking sheet and bake for 10 minutes.
Step 4
Squeeze the juice out of the orange and remove the zest from it with a fine grater. Purée cottage cheese with baked pumpkin, juice and orange zest with a blender. Coat the finished cookies with the resulting cream and, if desired, sprinkle nuts on top.
