It is necessary

    • 1 kg loin;
    • 2 medium onions;
    • 1 tbsp. a spoonful of salt;
    • ½ teaspoon of sugar;
    • ¼ tsp coriander;
    • 1 star carnation;
    • 2 black peppercorns;
    • 2 allspice peas;
    • 1 bay leaf;
    • 2 cloves of garlic;
    • 5 g of saltpeter;
    • water.

Instructions

Step 1

Prepare the loin by rinsing the piece well under cold running water and patting dry with a paper towel.

In a mortar, combine salt, sugar, pepper, bay leaf, coriander, cloves, garlic and saltpeter.

Rub all ingredients with a pestle.

Divide the mixture in two and rub one part thoroughly into the meat.
