Spinach is one of the healthiest foods for a reason. In terms of the content of vitamins and iron compounds, it has no equal. One of the classic spinach recipes is an omelet with spinach.

- 1 tbsp vegetable oil
- half onion
- 400 g potatoes
- 10 g butter
- 125 ml. milk for potatoes and
- 100 ml milk for omelet
- 6 eggs
- 20 g margarine
- salt
- pepper

Step 1
To prepare this dish, it is best to take fresh spinach, but if you do not have one, you can use frozen one.
Step 2
Rinse fresh spinach leaves well under running water, pat dry with a towel. Let the frozen spinach thaw, drain the excess liquid.
Step 3
Peel the potatoes, cut them in half and cook in salted water.
Step 4
Cut the onion into small cubes, fry in vegetable oil until golden brown. Add spinach to the pan, continue to fry until the leaves fall into one continuous mass. Add salt and pepper.
Step 5
Drain the potatoes, take a crush, and mash the potatoes with warmed milk.
Step 6
Mix eggs with milk, season with salt and pepper. Fry an omelet from the egg mass.
Step 7
Take a warm plate and place three identical heaps of spinach, mashed potatoes, and an omelet on it.
