Ahoblanco is one of the Spanish soups served cold. The home of this dish is hot and sunny Andalusia. Achoblanco is prepared with ground almonds and served with grapes or melon slices.

It is necessary

  • - 150 g fresh almonds;
  • - stale white bread - 150 g;
  • - garlic - 3 cloves;
  • - olive oil - 100 ml;
  • - dry white wine or dry sherry - 30 ml;
  • - water - 700 ml;
  • - juice of half a lemon;
  • - large-sized white and dark grapes - 200 g;
  • - salt and pepper.

Instructions

Step 1

First, prepare a small container of ice water - you will need it to peel the almonds. Soak the bread in 200 ml of water, leave for 10 minutes.

Step 2

Pour boiling water over the almonds so that they are covered by 2-3 centimeters. After 5 minutes, drain the hot water, and fill the almonds with ice water. After a few minutes, peel the almonds by squeezing the kernels between the thumb and forefinger.

Step 3

Peel and grind the garlic in a food processor or blender along with the almonds. Add bread with water in which it was soaked, grind the ingredients again.

Step 4

Pour olive oil, sherry and water into the food processor (blender) in turn, whisking the mixture each time. Season the soup to taste with pepper and salt, put it in the refrigerator for several hours.

Step 5

About an hour before serving the soup, cut the grapes in half and carefully remove the seeds using a sharp-tipped knife or toothpick. Sprinkle the grapes with lemon juice from the cut side and put them in the refrigerator. We also put the plates in which the soup will be served in the refrigerator.

Step 6

Pour the soup into bowls, sprinkle with ground pepper for beauty, sprinkle with olive oil (literally 6-7 drops per plate), lay out the grapes and serve immediately.
