In the hot season, cold soups are an indispensable dish. They stimulate appetite and at the same time refresh the body. Cold soups are based on vegetables, and the most popular summer low-calorie soup is Spanish gazpacho.
It is necessary
- - 150 g bread crumbs;
- - 2 tablespoons of grape vinegar;
- - 2 cloves of garlic;
- - cucumber;
- - medium-sized red onion;
- - 120 ml of olive oil;
- - half a red sweet pepper;
- - 10 medium tomatoes;
- - ground black pepper and salt to taste.
Instructions
Step 1
We make crosswise cuts on the tomatoes, dip them in boiling water so that it is easy to remove the peel.
Step 2
We clean the cucumber, remove the seeds. Cut all vegetables into small pieces, put them in a saucepan, add vinegar, a teaspoon of salt, ground pepper. Grind all the ingredients with a blender, gradually pouring in the olive oil. We taste the finished soup, add salt and pepper if necessary, put it in the refrigerator for at least 2 hours.
Step 3
You can serve gazpacho with pieces of vegetables to taste (pepper, cucumber, tomatoes) and with croutons.
