If you like Spanish food, then you can make Salmorejo Cold Soup. It is somewhat similar to gazpacho, but there is still a difference between the two dishes - both in preparation and in ingredients. This soup turns out to be not only very tasty and aromatic, but also quite satisfying.

Ingredients:

  • 700 g ripe tomatoes;
  • a couple of slices of white bread;
  • ¼ glasses of olive oil;
  • 1 chicken egg;
  • 1/8 cup chopped almonds
  • a couple of garlic cloves;
  • ½ teaspoon wine vinegar;
  • 2 slices of ham;
  • salt.

Preparation:

  1. First, you need to rinse the tomatoes, cut them lengthwise into two halves. Then gently squeeze out the juice along with the seeds. It needs to be rubbed through a sieve. Pour the pure juice into a separate cup as you still need it. As for the seeds, you can throw them away. The tomatoes themselves must be cut into small pieces with a sharp knife.
  2. Chopped, or rather, chopped almonds must be poured into an absolutely dry and hot frying pan. It needs to be dried a little, it can take 2-3 minutes.
  3. The bread slices also need to be dried. To do this, you can use both an oven and a toaster. Next, the prepared bread needs to be broken into rather small pieces with your hands.
  4. Then you will need a blender. In his bowl, add the tomatoes and tomato juice that you left in a separate cup. Send almonds there, as well as pieces of bread and garlic. Everything needs to be crushed until smooth.
  5. Next, you need to add olive oil to the resulting mass. This must be done carefully. Turn the blender on to minimum speed and pour in the oil in a thin stream.
  6. In order for the soup to have an airy and very tender consistency, it must be wiped through a sieve (in the absence of a sieve, you can use a colander).
  7. Then add salt and wine vinegar to the soup. After that, you need to place it in a cold place for a couple of hours (a refrigerator is perfect for this).
  8. Boil a chicken egg. After it has cooled down, it must be peeled from the shell. Cut the egg itself into small pieces. You also need to chop the ham.
  9. Then you can start serving. To do this, you need to pour the resulting soup into each plate and add a pinch of ham and eggs. This cold soup, which has a unique taste, is also very useful, since the products used are not heat-treated (except for eggs).
