The Spaniards cook soup from green peas all year round, from fresh peas in summer, and from frozen ones during cold weather. Now, with the onset of summer, when the soul asks for something bright, "Spanish Green Pea Soup" is what you need.
It is necessary
- - 1 kg of green peas;
- - 150 g of onions;
- - three cloves of garlic;
- - 1 liter of chicken broth (or vegetable);
- - olive oil;
- - 8 slices of bacon;
- - salt, pepper to taste.
Instructions
Step 1
Pour a small amount of olive oil into a saucepan with a thick bottom and put on fire. Fry finely chopped onions in hot olive oil for five to seven minutes. To soften the onion faster, you need to salt it. Chop the garlic finely and add to the onion in a saucepan. Stir fry for another 1-2 minutes.
Step 2
Pour chicken broth into a saucepan (if desired, chicken broth can be replaced with vegetable broth). When the broth boils, add green peas to it and cook for 6-9 minutes, until the peas are soft. Set aside and let cool slightly.
Step 3
Grind the resulting soup with a blender. It is not necessary to grind everything until smooth, you can leave small grains.
Step 4
Put the bacon slices in a skillet and fry until crispy. Place bacon on a napkin or paper towel to remove excess fat.
Step 5
Pour the soup into bowls, add a little black pepper, put bacon slices on top, garnish with herbs and drizzle with a few drops of olive oil. The soup is ready.
