Tarator soup is a traditional Bulgarian dish. The dish is served cold and is a real storehouse of vitamins. This soup is especially useful in winter.
It is necessary
- - 500 ml of natural yogurt (or kefir)
- - vegetable oil
- - salt
- - ground black pepper
- - 4 cloves of garlic
- - 100 g walnuts
- - 4 cucumbers
- - 1 bunch of dill
Instructions
Step 1
Cut the cucumbers into thin strips or grate on a coarse grater. Grind the garlic and walnuts with a blender. Beat the yogurt with a mixer.
Step 2
Chop the dill and mix with a little salt. Mash the herbs with your hands so that the salt saturates them. Combine nuts, garlic, walnuts, dill, and cucumbers in one bowl.
Step 3
Add the garlic mixture to the yogurt. Mix all ingredients thoroughly. Add salt and pepper as you like.
Step 4
Put the prepared soup in the refrigerator for 30-40 minutes. Before serving, the dish can be garnished with parsley or walnut kernels. If the consistency of the soup turns out to be too thick during cooking, you can dilute it with yogurt or cold boiled water.
