Bird's nest salad is a popular dish. Due to its simplicity, satiety and originality of design, this salad can be served both for everyday and festive tables.

It is necessary

    • 500 g chicken fillet;
    • 5 chicken eggs;
    • 500 g potatoes;
    • 1-2 heads of white or regular onions;
    • 3-4 large cucumbers;
    • greens to taste;
    • salt;
    • mayonnaise or yogurt;
    • vegetable oil;
    • 3-4 quail eggs for decoration.

Step 1

Rinse the chicken fillet in running cold water, dry, put in a saucepan, cover with cold water, bring to a boil, salt, cook until tender for about 20 minutes more. Remove the fillets with a slotted spoon, cool and dry, cut into small square pieces, lightly dry in a dry frying pan on all sides and place in a salad bowl.

Step 2

Wash, peel white onions, chop finely. If you do not have white onions, take a regular one, but then after chopping it, pour boiling water for 10 minutes to remove the bitterness from the onion. Drain and rinse in cold water.

Step 3

Wash and peel potatoes, cut into small, thin strips. You can also grate it on a special grater for Korean salads. Pour a 1-1.5 centimeter layer of vegetable oil into the pan.

Step 4

Heat the oil slightly so that it does not splash, place the potatoes in a skillet and fry until light golden brown. Do not put a lot of potatoes at once: it is necessary that it be completely covered with oil, otherwise the slices will stick together and will not fry well. It is better to cook potatoes in small portions in several stages.

Step 5

Wash and peel the cucumbers, then cut them into thin strips 3-4 centimeters long. Hard boil the chicken eggs, remove the yolks. Finely chop the proteins with a knife or grate. Wash and dry the herbs, chop finely.

Step 6

Put all the ingredients except ¼ of the fried potatoes and chopped greens in a salad bowl with the fillets and mix thoroughly and season with salt. Season to taste with mayonnaise or unsweetened yogurt, if you don't like mayonnaise, stir again.

Step 7

Make a small indentation in the center, place the fried potatoes along the edges of the indentation to form a nest. Put boiled and peeled quail eggs or boiled yolks that did not go to the salad in it. Sprinkle finely chopped herbs around the lettuce.
