Step 1

To cook a Caucasian shish kebab, first of all, you need to prepare an onion. Using a knife, peel the onion from the husk, then rinse it thoroughly under cold running water. Chop the peeled onion into rings of medium thickness and transfer to a deep bowl.

Step 2

Take the meat of a young lamb, rinse it thoroughly, cut into portions. Transfer the meat to a large deep dish, add salt and black pepper to taste. Mix the spiced lamb with your hands and let the ingredients sit for 10-15 minutes to allow the meat to absorb the salt and pepper.

Take a deep bowl and pour in 500 milliliters of clean cold water, add grape vinegar and stir. Put the onion rings to the meat and pour everything with the resulting marinade from water and vinegar. Cover the dish with a lid and put the meat in the refrigerator; it should marinate for 2-5 hours.

Before frying Caucasian shish kebab, prepare a charcoal grill. Put firewood on the bottom of the barbecue and light them with matches. As soon as the wood reaches the middle of the combustion, start adding charcoal in small portions.

Stir the coals with a skewer, let the wood burn out. As soon as the fire is gone and the coals start smoldering, start cooking the kebab.

Remove the marinated meat and start stringing the lamb pieces onto the skewers. There should be some free space between the pieces, in which case the meat will be well fried from all sides. You can also string pickled onions between the pieces.
