The first warm spring weekend - a trip to a picnic, rest with friends, relatives and, of course, delicious barbecue with smoke.
A little more time will pass and the May holidays will come. Behind the long winter months in stuffy city apartments, and with the onset of sunny May days, you want to get out for a picnic. An organized picnic trip with friends or family will bring a lot of happy and joyful moments - fresh country air, relaxed pleasant conversation and, of course, delicious food.
Shish kebab is rightfully considered the main dish at a picnic. The basic rule of a juicy and aromatic kebab is that in no case bake meat over an open fire, you must wait until the wood burns out and bake the kebab over the heat emanating from the coals. Good coals can be obtained from burning dry wood of deciduous trees: birch, alder. You can experiment with fruit chips: cherries, apple trees, apricots. Do not use spruce or pine wood, these resinous specimens will give the kebab an unpleasant smell and taste. Of course, stock up on skewers and different types of grates. Before using, the grates must be coated with oil and ignited over a fire so that the food does not stick.
Pork kebab
Prepare a shish kebab from fresh meat. Cut the meat pulp into pieces of 50-60 grams. Put chopped portions into an enamel bowl, add salt, sprinkle with pepper, basil, add onion chopped into rings and mix. We do not add vinegar. For marinating fresh meat, 30 minutes is enough.
While the meat pieces are marinated, we warm up the grill, because the quality of the cooked kebab will depend on how well the grill warms up. If the grill is not heated to a certain temperature, then the coals will quickly cool down and the kebab will turn out to be dryish. To make your kebab juicy, fry the meat on all sides over high heat until golden brown. The melted fat that forms a crust will prevent the juice from flowing out of the pieces of meat, and the kebab will turn out juicy. And then naturally the coals will begin to gradually cool down, and the meat pieces will be baked until the stage of readiness.
A sprig of dry marshmallow thrown on the coals will give the kebab an unusual aroma. When frying the kebab, do not try to turn the skewers often, otherwise the meat will dry out.
After the picnic, do not forget to leave the meadow in its original state. All the garbage that burns can be burned, or it is better to collect it in garbage bags and take it to a specially designated place for garbage dump. Do not pollute the world in which you live and in which your children and grandchildren will live. Take care of nature - this is the most important treasure in our world.
