  • • Canned cucumbers of gherkin variety 2-4 pcs.
  • Products for the marinade:
  • • Vinegar (apple, white or wine) - 200ml.
  • • Water - 200 ml.
  • • Onions 1–2 pcs.
  • • Black peppercorns - 8 pcs.
  • • Mustard seeds - 0.5 tsp.
  • • Cloves, juniper berries (optional)
  • Kitchenware:
  • • Container for pickling
  • • Wooden skewers or toothpicks

Instructions

Step 1

Cooking should start with the preparation of the marinade. For this, onions are peeled and cut into half rings. Then pour water, vinegar into a saucepan, add black pepper, mustard seeds and bring the mixture to a boil. After the marinade has boiled, it is allowed to boil for about 5 minutes and chopped onions are placed in it. The resulting mixture should cool to 40 degrees.

Step 2

Fillet of herring is cleaned of large bones, gherkins are cut into small cubes or lengthwise into 4 parts. Cut the onions thinly into half rings or finely, like cucumbers. The fillets are carefully laid out on the table, greased with a thin layer of hot mustard. Cucumbers with onions are spread over the mustard and wrapped in a roll. You can fasten the roll with a skewer or a toothpick.

Step 3

The resulting rolls are laid out in a container, poured with marinade and poisoned for 2-3 days to saturate the herring with taste in the refrigerator. Serve with rye bread, mashed potatoes or fried potatoes.
