This recipe describes how to cook stuffed eggplant in the oven.
It is necessary
- - 3 eggplants;
- - 1 carrot;
- - 2 tomatoes;
- - 2 cloves of garlic;
- - 2 onions;
- - 1 pepper (Bulgarian red);
- - add cheese, pepper, mayonnaise and salt to taste.
Instructions
Step 1
Rinse the eggplants, cut the stalks and remove the core (pulp) by cutting the vegetable lengthwise. Dip the resulting eggplant boats from the eggplant into a saline solution (10 g of salt in half a glass of water) for a few minutes.
Step 2
Filling: chopped carrots, bell peppers, the remaining eggplant pulp and onions, fry in a pan. Add finely chopped garlic and tomato to the fried vegetables, season with salt and pepper to taste.
Step 3
Fill the eggplant boats with the filling, if desired, you can pour with mayonnaise and grate the cheese, then put them on a baking sheet (grease a little with butter), send them to the oven for 30 minutes.
