Step 1
Peel 3 cloves of garlic, finely chop, add spices: 1 teaspoon of ground ginger, 1 piece of chili, half a teaspoon of salt. Pound everything well in a mortar until a pasty consistency is formed. Add 60 ml of vegetable oil and stir. You should get a marinade.
Wash the fillet of one chicken, pat dry with a towel, cut into strips about 2 centimeters thick. Slice across the grain. Put in a bowl, cover with marinade. Stir until the marinade is evenly spread over the meat. Leave in a cool place for one hour.
Step 2
Peel the medium pineapple. First, cut off the top and bottom with a sharp knife, then stand the pineapple upright and cut the peel from top to bottom. Cut in half and into quarters. Remove the hard core. Cut the remaining pieces into cubes. You should get about 350 grams of pulp.
Step 3
Preheat a skillet. Pour a tablespoon of vegetable oil into it, put 60 grams of sugar. Wash one small lemon, cut in half, squeeze the juice into a frying pan. Put the lemon peels in the pan for 1-2 minutes - for flavor. Then remove carefully. While stirring, heat the mixture over low heat until the sugar dissolves.
Step 4
Place the chicken pieces with the marinade in the pan and stir. Add pineapple pieces and mix thoroughly. And cook, covered over medium heat, for 5 minutes, until the chicken is tender. Do not overdo the meat, make sure it does not get dry. Serve hot with boiled rice or potatoes. Garnish the chicken with pineapple slices.
