Step 1

Wash my heart well, put it in a saucepan, fill it with water and cook for 60 minutes, regularly remove the foam. Then add salt and cook over low heat for another 50 minutes. It is advisable to change the water before the second stage of cooking. While the beef heart is boiling, clean and dice the carrots, parsley and onions. By the way, in order to reduce the cooking time, it is better to cook the heart in advance.

Step 2

Cool the boiled heart and cut into thin slices across the fibers, put in a preheated pan, salt and pepper, add vegetables. First, heat the tomato sauce slightly, mix it with sour cream and pour it into a pan with a heart and vegetables, cover and simmer for 20 minutes. Remove the pan from the heat, transfer the food to a baking sheet and put mashed potatoes or rice in the middle of the dish. We bake the beef heart with a side dish in an oven preheated to 200 ° C for 10 minutes. Sprinkle with chopped herbs before serving.

In summer, beef heart can be cooked not with tomato paste, but with fresh tomatoes. You can also put any seasonal vegetables in the dish: turnips, eggplants, bell peppers, zucchini and pumpkin. Spicy herbs and bay leaves will not be superfluous. This recipe can also be used to cook veal or beef.
