So, let's prepare the meat first. It must first be washed under water, remove unnecessary veins, layers and cut into small pieces.

Next, the pieces of beef must be fried in vegetable oil until an appetizing crust appears. This will only work in a very hot frying pan. Then pour chopped onion into a frying pan with meat and reduce heat to medium.
Step 3
As soon as the onion has become transparent, use a wooden spatula to move the fried meat and onion to one half of the pan, and pour flour on the other and mix well with butter until all the lumps disappear. If there is not enough vegetable oil in the pan, add more.
Step 4
After everything has been thoroughly mixed, pour in the tomato sauce or grated tomatoes, mix again.
Step 5
Add broth or hot water to the pan until all pieces of meat are hidden. Salt and pepper at your discretion. We switch the heat to low and simmer the goulash for 40 minutes.

The goulash gravy should turn out to be red-brown in color with an amazing aroma.
