To prepare a beef heart in Russian you will need: 500 g of offal, 4 tbsp. butter, 5 carrots, 1 parsley root, 2 onions, 2 pickles, 6 potatoes, 2 lavrushki, garlic, black peppercorns, salt - to taste. Before cooking, cut off fat and blood vessels from the beef heart, remove blood clots and rinse thoroughly. Cut the offal, cover with cold water and leave for 2-3 hours to soak. Then drain and rinse again. Put the heart in a saucepan, cover with cold water, put the roots and onions, cook for 1, 5 hours.

Cut the boiled heart into small pieces, lightly fry in a skillet and place in a deep saucepan. Grate the carrots, finely chop the onions and parsley root, and save in oil. Peel the pickles, remove the grains and cut into small cubes. Put sautéed roots and cucumbers in a saucepan along with pieces of beef heart, pour over with tomato sauce and simmer until tender. At the end of cooking, add the garlic, rubbed with salt, and stir.

Beef heart stewed in beer turns out to be delicious. You will need: 300 g of offal, 250 ml of beer, 1 onion, 2 tbsp. tablespoons of vegetable oil, juice of half a lemon, ginger, cardamom, salt. Cut the prepared beef heart into pieces. Chop the onion into thin half rings, mash them with your hands until juice forms. Put pieces of beef heart in onions, add ginger and cardamom, salt to taste, pour half of the whole beer. Cover the dishes with a lid and refrigerate for 6-8 hours. Then add the butter and simmer for another 15-20 minutes.

Prepare a beef heart stewed in sour cream. You will need: 1 heart, 3 bay leaves, 2 onions, 3 cloves of garlic, 150 g sour cream, 1 tbsp. tomato paste, 0.5 tbsp. water, spices, salt, pepper. Boil the beef heart, cool, cut into long strips and salt. Cut the onion into half rings and the garlic into slices. Heat oil in a frying pan, add garlic and onion, lightly fry over low heat. As soon as the garlic aroma appears, lay out the heart slices, sprinkle with spices. Fry for 5 minutes. Combine water, sour cream and tomato paste. Pour the resulting sauce over the beef heart and simmer over low heat for 7-10 minutes until the sauce thickens.

To prepare beef heart salad, you will need: 1 kg of offal, 2 carrots, 2 onions, 2 pickles, 0.5 tbsp. vegetable oil, mayonnaise. Prepare the heart, boil it and refrigerate it. Then chop finely. Wash onions and carrots, peel, chop or grate. Fry in vegetable oil. Grate pickles and fry separately. Place the fried vegetables in a colander, drain the oil and refrigerate. Mix all ingredients, season with mayonnaise and stir.
