Probably everyone loves dumplings. For the filling, you can use cottage cheese, various berries, cabbage, potatoes, meat, mushrooms and even fish. I want to tell you a recipe for dumplings with chicken liver.

It is necessary

  • For the test:
  • • 400 g of premium wheat flour
  • • 2 large boiled potatoes
  • • 200 g of cottage cheese
  • • 1 egg
  • • salt
  • • 2-3 tablespoons of vegetable oil
  • For filling:
  • • 600 g chicken liver
  • • 1 large carrot
  • • 1 large onion
  • • Vegetable oil for frying
  • • 3 tablespoons of mayonnaise
  • • Salt, pepper to taste

Instructions

Step 1

Rub cottage cheese and boiled potatoes through a fine sieve and mix. Add the egg, vegetable oil, salt to the curd and mix everything well again. Now we gradually introduce flour. Flour should be introduced in small portions and kneaded all the time. This is necessary in order not to overdo it with flour. The flour consumption will depend on the wateriness of the potatoes and the fat content of the cottage cheese. Knead the dough well, wrap it in plastic wrap and put it in the refrigerator to "rest".

Step 2

In the meantime, we will prepare the filling for our dumplings. To do this, we pass the chicken liver through a meat grinder. Finely chop the onion, three carrots on a coarse grater. Saute prepared vegetables with vegetable oil. When the onions and carrots are ready, we send the twisted liver to the pan, make a moderate heat, and stir occasionally, bring the filling to readiness. Do not forget to salt and pepper during the frying process. Let the finished liver cool and add mayonnaise, mix everything. The filling is ready.

Step 3

Now we will make dumplings. Cut off a small piece of dough and roll it into a strip. Cut the strip into small pieces, knead each piece in flour and roll out circles 2-3 ml thick. Put the filling in the center of the circle and glue the edges of the dough tightly so that they do not stick out during cooking. We do this with all the dough and filling.

Step 4

We send the prepared dumplings into salted, strongly boiling water, bring to a boil, reduce the heat and cook for five minutes. Using a slotted spoon, we take out the dumplings from the pan onto a plate.

You can serve dumplings with chicken liver with sour cream or butter, sprinkled with fresh herbs.
