The optimal basis for the broth is chicken - dietary meat with a small amount of fat. For broth, choose soup chicken, not broiler, which are usually sold in the store. Soup chicken is a laying hen, that is, one that is not a meat breed and is not less than two years old.
Spices in the broth, of course, are needed, but you should not abuse them, as they can interrupt the natural taste and smell of chicken.
To prepare the broth, you need to put the meat in cold water and cook for at least an hour over low heat.
