It is necessary

  • - 0.5 kg of beef on the bone or beef pulp;
  • - 2 liters of water;
  • - 200 g of potatoes;
  • - 1 large carrot;
  • - 1 medium-sized onion;
  • - vegetable oil for frying;
  • - 4-5 st. spoons of buckwheat, rice, pasta, barley or beans;
  • - salt and black pepper to taste;
  • - 2-3 bay leaves;
  • - fresh herbs.

Instructions

Step 1

Cook the beef broth. For the preparation of the broth, you can use either beef fillet or beef on the bone. The beef flesh broth turns out to be "light" and light, and the bone broth - more "strong", dark and aromatic. Place the beef in a saucepan and cover the meat with cold water. If you decide to use beef flesh, pre-cut the meat into small pieces that can fit in a spoon. Bring water to a boil, skim off any foam, cover the pot and reduce heat to low. Boil the broth until the meat is tender. It will take 40-60 minutes. If you used beef on the bone to make the soup, then, after the meat is cooked, remove it from the broth, remove it from the bone, cut into small slices and put it back into the soup.

Step 2

Peel potatoes, carrots and onions. Chop the onion into cubes, grate the carrots. Cut the potatoes into medium-sized slices. If the potatoes are small, you do not need to chop them, but put them whole in the soup. Saute the onions and carrots in a little vegetable oil until tender. Add the chopped potatoes to the finished beef broth and cook for 10 minutes. Then add fried onions and carrots, bay leaves, spices to the soup. Boil the soup for another 10 minutes.

Add rice, pasta, buckwheat, barley or beans to the beef broth soup, if desired. Pasta should be added 5-10 minutes before the soup is ready, buckwheat and rice - in 20 minutes, barley - in 40 minutes, and it is better to add beans already pre-cooked a couple of minutes before the end of cooking.

Pour the soup into portioned bowls, sprinkle with finely chopped fresh herbs and serve.
