Ingredients:

  • 1 kg of beef (brisket is perfect);
  • 200 g of rice groats;
  • 5 ripe tomatoes;
  • 2 leaves of lavrushka;
  • water - 4 l;
  • 1 medium onion;
  • 3 tbsp sunflower oil (preferably odorless);
  • 3 garlic cloves;
  • spices and salt.

Preparation:

  1. First you need to prepare the broth. To do this, rinse the beef thoroughly (you can soak it for 1 hour in cold water). Then the meat is cut into pieces and placed in a sufficiently deep saucepan. Water is poured there. Then the saucepan is placed on the stove and the meat is cooked until cooked through, usually taking at least 120 minutes.
  2. Then salt and pre-washed rice groats are poured into the pan. After that, the soup should be cooked for at least a third of an hour.
  3. Then you need to prepare the frying. Peel and rinse the onion. Then, using a sharp knife, it must be cut into rather small cups. Be sure to remove the skin from the tomatoes. They are scalded with freshly boiled water and then the skin is removed very easily. After that, the tomatoes are rubbed through a sieve or chopped very finely.
  4. Place a frying pan on a preheated stove, into which you need to pour oil. Then pour chopped onions and tomatoes into it. It is not necessary to fry vegetables for a very long time, or rather, until half cooked. Then the contents of the pan are poured into the soup. Also, scented spices should be sent to the pan. After that, the soup should boil for at least 10 minutes.
  5. Then the pan is removed from the stove. It is necessary to fill it with finely chopped garlic cloves. Everything mixes well. Be sure to cover the soup with a lid and leave for at least a quarter of an hour to infuse.
