- -2 onions,
- -2 carrots,
- -0.5 tsp thyme,
- -100 ml of water,
- -3 eggplants,
- -2 tomatoes,
- -2 bell peppers,
- -1 bunch of cilantro,
- -3 cloves of garlic,
- -salt to taste.
Instructions
Step 1
We wash the lamb well, clean it from films and cut into small pieces. Fry the meat in small portions, pour the juice out into another pan.
Step 2
Peel the onion, cut into small cubes, fry in the juice from frying the meat.
Step 3
We clean the carrots, wash them, cut them into half rings. Once the onion is translucent, add the carrots and fry over medium heat for ten minutes.
Step 4
Put the lamb, fried onions and carrots in a large frying pan, season with thyme, add water, salt, stir and put on the lowest heat. Simmer covered for about 50 minutes. Stir from time to time.
Step 5
We wash the eggplants and bell peppers well, dry them, cut them into small pieces. We also cut the tomatoes. Chop the garlic cloves in any convenient way. My cilantro, shred. We shift the vegetables to the lamb pan, increase the fire power to medium, cover and simmer until the vegetables are soft, stir from time to time. Then add the tomatoes and evaporate the liquid.
