Lamb with apricots - why not? These products go well together. And if you make them in vegetable sauce, it will turn out very tasty.

- dried apricots - 100 g
- 2 medium onions
- tomatoes -150 g
- bell pepper 200 g

Instructions
Step 1
Remove seeds from the pepper. Cut it into small pieces. Chop the tomatoes and onions in the same way. Stir the vegetables. The pieces should be slightly larger than they would be if you grate them on a coarse grater.
Step 2
Preheat a skillet, pour in some vegetable oil and put the vegetables there. Add spices. Sauté the mixture for about 10 minutes over medium heat. Place vegetables in a patch and cover them with hot water.
Step 3
Chop the lamb into large pieces. Place the meat in a patch on top of the vegetables. Wash the apricots and place them on top of the lamb. Cover the dish with a lid, place in the oven and simmer until the meat is half cooked over medium heat. You do not need to pre-soak apricots.
Step 4
Remove the meat and cut it off the bones. Cut the lamb into small pieces and put it back in the patch. Cover and simmer until tender.
