Mushroom soup is boiled in water, meat or mushroom broth, vegetable broth. Mushroom soup is obtained with a unique aroma, but it is better to cook it once, so as not to heat up and spoil the taste.

- fresh mushrooms (250 g)
- pearl barley (100 g)

Instructions
Step 1
Place the dried mushrooms in a sieve and rinse well under running water. Pour cold water over the mushrooms in a bowl. Let them sit and swell for 3 hours. Carefully pour the dark water into the saucepan through a sieve. Boil mushrooms in this water. There will be sediment at the bottom of the bowl that can be thrown away.
Step 2
Chop soft mushrooms and place in a saucepan. Simmer for 45 minutes, finely chop the onion and fry in oil. Transfer to mushroom broth. The broth should be simmered and peel a couple of potatoes. Cut into cubes and place in mushroom broth. Cook for 15 minutes.
Step 3
Rinse the pearl barley under the tap. Place in a saucepan and pour boiling water a couple of centimeters above the cereal level. Place on medium heat. Stir occasionally so that the cereal does not burn. When the water level drops, top up with fresh cold water, so the barley will quickly cook for soup. Rinse the prepared barley and place in the soup 5 minutes before cooking. Serve the boiled soup with sour cream and sprinkle with fresh herbs.

Cut fresh mushrooms into slices, simmer in a saucepan with chopped onions. Pour the washed barley with a large amount of boiling water and cook until half cooked. Add potato cubes, stewed mushrooms and onions to the barley and cook for another 15 minutes. Season the finished soup with sour cream on a plate.
