Marinating is a great way to make delicate fish even more flavorful and juicy. Quick and easy, savory marinades are perfect for preparing fillets, steaks and whole carcasses for grilling.
Mediterranean style marinade
Light marinades based on olive oil, lemon juice and aromatic vinegar will give fish a unique taste of Mediterranean dishes, a great southern touch, so suitable for a leisurely summer evening. For 4 fish fillets, each weighing at least 200 grams, you will need:
- ½ cup olive oil;
- 1 tablespoon of balsamic vinegar;
- 1 lemon;
- 4 sprigs of thyme;
- 1 tablespoon of chopped rosemary leaves;
- salt and freshly ground pepper.
You can add a little lemon or orange zest to an Italian marinade. It will give not only a pleasant aftertaste, but also make the dish brighter.
In a small saucepan, lightly heat the olive oil and add the herbs to it. So they will give the maximum aroma and taste to the marinade. Chill the oil and squeeze the lemon juice into it, add salt, pepper and balsamic vinegar. Whisk the marinade lightly, put the fish in it and marinate for 30-40 minutes.
Marinade in oriental style
For the dish to acquire a recognizable characteristic oriental aroma and flavor, it is enough to marinate it in a mixture of sesame oil and soy sauce. It is these two ingredients that are most common in most Asian dishes. Try making a marinade using:
- ½ cup sesame oil;
- 3 tablespoons of light soy sauce;
- ½ cup rice vinegar;
- ¼ a glass of brown sugar;
- 2 teaspoons of grated ginger;
- 2 cloves of minced garlic;
- ¼ cup chopped cilantro.
Mix all the ingredients together, whisking lightly until the sugar partially dissolves. Marinate about a kilogram of fish and refrigerate for 40-60 minutes. The finer the fish is cut into pieces, the less it should be marinated. If you marinate tender fish for too long in an acidic environment, it may be cooked before you put it on the grill.
Choose dishes made from non-reagent materials for marinating. It's best to take a glass bowl, plastic container, or marinate the fish in a tight, zip-fastened plastic bag.
French style marinade
Fish in a simple, savory marinade cooked in a classic French style will turn out to be no less tasty. You will need:
- ¼ glass of olive oil;
- ¼ glasses of white wine;
- 2 tablespoons of lemon juice;
- 1 clove of garlic;
- 2 teaspoons of lemon zest;
- 1 teaspoon of Dijon mustard;
- 1 tablespoon of thyme leaves.
Combine all the marinade ingredients in a container, place the fish in the resulting mixture and marinate for 30 minutes to several hours, depending on the size of the fish.
