A good kebab doesn't have to be meat. A kebab made of game, fish and vegetables is as tasty as it is unusual. If you like to experiment and surprise your loved ones with a non-standard approach to classic dishes, fry the fish on skewers or on wooden skewers. The marinade will give it a special taste and aroma.

Step 1
Sometimes you can find the statement that it is not necessary to marinate fish for barbecue - it is enough to rub it with salt and spices. Nevertheless, if you want to make the flesh of the fish more tender and aromatic, more oily, or, conversely, slightly dry it - you cannot do without marinade.
Step 2
First, choose the fish you will use to make the kebab. The composition of your marinade will depend on how fatty, dense or loose its meat is. Excellent kebabs are obtained from trout, sturgeon, tuna, salmon. Mackerel, pink salmon, and greenling are also suitable. If the fish is oily enough, you do not need to add oil to the marinade. For dry fish (for example, pink salmon), it is better not to use very acidic marinades, as they will dry out the flesh even more.
Step 3
The simplest marinade is the juice of one lemon, chopped onions, salt, black pepper and any greens. If you want the fish to be more juicy, add vegetable oil to this marinade - olive or sunflower. You can experiment endlessly on the basis of this mixture, adding mustard, garlic or sugar to taste.
Step 4
A more sophisticated option is to mix dry white wine, oil, lemon juice (from half a lemon), spices, herbs and salt.
Step 5
Fish kebabs marinated in pomegranate juice have a very pleasant taste. For it you need natural pomegranate juice, vegetable oil, salt and spices (coriander, ground white and black pepper). Such a marinade is especially suitable for white fish kebabs (sturgeon, pike perch, catfish).
Step 6
Unusual, rather for gourmets, marinade for red fish (trout, salmon) is a mixture of soy sauce, lemon juice, fresh ginger and a small amount of honey.
