Pasta made from Japanese noodles - udon (made from wheat flour) or soby (made from buckwheat flour) - turns out to be very tasty. One of the main components of the pasta is its filling. The vegetarian filling is made with a variety of vegetables. Vegetables are fried in combination with spices or prepared as a sauce using a blender.

Pasta with tomatoes and eggplant

You will need: pasta or spaghetti - 300 g; salt - 1/2 tsp; tomato - 2 pcs.; eggplant - 200 g; dill or parsley - 30 g; vegetable oil - 1/2 tbsp. l.; olive oil to taste; spices: asafoetida, black pepper, coriander - to taste.

Wash the tomatoes and eggplant. Cut vegetables into small cubes. Preheat a frying pan, add vegetable oil. Fry the spices for a few seconds until aroma appears. Place the sliced eggplant in the skillet. Fry the eggplant over medium heat for about 5 minutes.

Chop the herbs finely. Place the tomatoes over the aubergines to fry. When the tomatoes are tender, add the herbs and cook the vegetables until tender.

Cook the pasta in salted water. Put the finished pasta on plates. Season with olive oil to taste. Place prepared vegetables on top and serve.

Alfredo pasta

You will need: spaghetti - 200 g; vegetable oil - 1/2 tbsp. l.; spinach - 100 g; avocado - 1 pc.; pine nuts - 1/2 tbsp.; parsley - 10 g; lemon juice - 2 tsp; pepper 1/4 tsp; asafoetida 1/4 tsp; 1/8 tsp salt

Boil pasta or spaghetti in salted water. Do not drain the water in which the pasta was cooked, leave 1/2 cup of water. Heat vegetable oil in a skillet. Fry the asafoetida until it smells. Then add the spinach to the skillet. Saute the spinach until the leaves are tender. You can use frozen spinach.

Wash and peel the avocado, remove the pit. Place avocado, sautéed spinach, parsley, pine nuts in a blender bowl. Add a little water, in which the pasta was cooked, lemon juice, pepper and salt. Chop until puree. Mix the finished pasta and the resulting puree, heat in a pan. Arrange on plates, garnish with pine nuts.

Pasta with tofu and vegetables

You will need: tofu - 250 g; carrots - 1 pc.; bell pepper - 1/2 pc.; noodles - 200 g; sesame seeds - 2 tbsp. l.; soy sauce - 3 tbsp. l.; vegetable oil - 1/2 tablespoon; salt to taste; ground black pepper, coriander, cumin - to taste.

For this recipe, buckwheat noodles - soba are ideal. But you can use any other. Pour purified water into a saucepan, set the noodles to boil. Cut the tofu into small pieces. Marinate it in soy sauce.

Meanwhile, cut the carrots and peppers into long thin strips. Heat vegetable oil in a frying pan and fry spices in it - black pepper, cumin and coriander. You can use any spices you like.

Fry chopped carrots and peppers in hot spiced oil. When the vegetables are slightly browned, add the tofu to the skillet. And then ready-made noodles. Stir in the pasta and pour in some soy sauce in which the tofu was marinated. Remove skillet from heat.

In another dry skillet, fry the sesame seeds for 1 minute. Arrange the noodles on bowls, garnish with sesame seeds.
