A wonderful bright dish for a spring lunch!
It is necessary
- - 6 chicken fillets;
- - 1 zucchini;
- - 1 red bell pepper;
- - olive oil;
- - 2 large tomatoes;
- - 120 g of hard cheese;
- - pepper (red and black), salt, dried garlic to taste.
Instructions
Step 1
Divide the chicken fillet into 3 parts: cut off the small fillet, and cut the large one lengthwise into 2 parts. Beat each part through a plastic bag and sprinkle with salt, pepper and garlic. Let marinate for half an hour.
Step 2
Peel the zucchini. Cut into long thin strips. Grease the peppers with olive oil and bake in the oven until black. Cool under the lid and remove the skin. Cut in the same way, into strips. Cut 100 g of cheese into strips (it is better to do this with a cheese slicer).
Step 3
Put vegetables and cheese on the chicken and roll up. Secure with wooden skewers (soak them in cold water for 20 minutes so that they do not burn in the oven) and lightly brush with olive oil with a brush so that the fillets do not dry out. Send to an oven preheated to 180 degrees for 20 minutes. At the end of cooking, sprinkle with the remaining cheese and keep in the oven for another 5 minutes, preferably under the grill, so that they are browned. When serving, you can sprinkle a little chili pepper for piquancy. Bon Appetit!
