Fasting is a time of repentance and prayer. The Orthodox Church teaches Christians to maintain a moderate and healthy lifestyle. In lean cuisine, there are many healthy dishes that can support a person's physical strength during fasting days.
Georgian sauerkraut
You will need:
- cabbage - 1 head of cabbage
- hot red pepper - 1 pc.
- garlic - 1 head
- beets - 1 pc.
- parsley
- salt - 1 tbsp. l.
- sugar - 1 tbsp. l.
- vinegar
Preparation
Wash the beets, peel and cut into thin strips. Remove the first leaves from the cabbage head and cut into large squares. Chop hot red peppers, celery and garlic in a blender. We take a glass jar and lay it out tightly in layers: cabbage, beets, spicy mixture, etc. To prepare the marinade, pour 1 liter of water into a saucepan, add vinegar, salt, sugar. We put the saucepan with the marinade on the stove and bring to a boil. Fill the contents of the jar with boiling marinade. The cabbage will be ready in 2 days. Serve chilled.
Mushroom soup
You will need:
- champignons - 50-80 g
- pearl barley - 2-3 tablespoons
- carrots - 1 pc.
- vegetable oil - 1 tbsp. l.
- onions - 1 pc.
- potatoes - 3 pcs.
- tomato 1 pc.
- dill
Preparation
Chop and boil the mushrooms. Discard them in a colander. Boil pearl barley separately until half cooked. Finely chop the onion, carrot and tomato. Fry mushrooms and chopped vegetables in vegetable oil, salt and pepper. Dip the fried billet and pearl barley into boiling water. Cook until tender. At the end of the soup, add the chopped dill.
Fruit in sweet syrup
You will need:
- water - 1 glass
- apples - 3 pcs.
- pears - 2 pcs.
- red wine 2 tbsp. l.
- sugar - 1 glass
- cinnamon, cloves
- lemon zest
Preparation:
Rinse apples and pears and cut in half. Cut the core. Prepare sweet syrup. Boil water and, stirring occasionally, dissolve sugar in it. Add spices, wine and lemon or orange zest. Bring to a boil, lower the prepared fruit and cook over low heat.
