Seasonal vegetables can be used to make many delicious meals. One of them is squash puree soup. A tasty and healthy dish for children and adults. Try it - it's very easy.
It is necessary
- - 500 ml of chicken broth,
- - 500 g zucchini,
- - 1 carrot,
- - 1 stalk of celery,
- - 1 tomato,
- - 1 clove of garlic,
- - 2 tablespoons of butter,
- - caraway seeds at will,
- - ground black pepper to taste,
- - salt to taste.
Instructions
Step 1
Cook the broth from the chicken legs. If you are using pre-cooked broth, then reheat it.
Step 2
Rinse the zucchini, dry, cut into semicircles.
Step 3
Rinse carrots (medium size), peel, cut into small cubes. Carrots can also be cut into thin rings - to taste.
Step 4
Slice the celery to taste.
Step 5
Remove the skin from the tomato, cut the pulp into medium pieces.
Step 6
Put butter in a frying pan, heat it up. Fry the zucchini in oil until golden brown. Transfer the sautéed courgettes to a plate.
Step 7
In the same skillet, fry the carrots with celery for 4 minutes. If necessary, you can add some water.
Step 8
Add the prepared tomato and chopped garlic clove to the vegetables. Garlic can be grated or passed through a press. Cook the vegetables for another 3 minutes. Season with salt, black pepper and caraway seeds.
Step 9
Add the fried zucchini to the vegetables, cook for another 3 minutes.
Step 10
Transfer vegetables to a blender bowl, chop.
Step 11
Transfer the chopped vegetables to a saucepan with broth. After boiling, cook the soup for 2-3 minutes. Try it with salt. After boiling the soup, leave it covered for 10-15 minutes. Serve with fresh herbs.
