There are a wide variety of recipes that rice is added to. Rice is an excellent side dish for meat, fish and mushrooms. One of the recipes, quite unusual in taste, is this one.
It is necessary
- - 250 g smoked mackerel, use only fillets;
- - 1 packet of aromatic white rice;
- - 1 package of wild Basmati rice;
- - 2 liters of vegetable oil;
- - 1 sweet red pepper;
- - 1 fresh eggplant;
- - 5 branches of parsley.
- for refueling:
- - 1 clove of garlic;
- - 1 l. H. capers;
- - 1 lemon;
- - 5 liters of olive oil;
- - 0.5 l h. salt and pepper.
Instructions
Step 1
Pour water into a small saucepan, add salt, and cook 1 packet of Basmati Mix rice in it. Put the finished rice in a deep bowl. Do the same with the second bag of rice.
Step 2
Cut the fish fillet into medium pieces.
Step 3
Cut the eggplant into thin pieces and rub with pepper and salt. Then pour a little oil over the pieces of eggplant. Heat the grill pan to the maximum temperature and fry the eggplants on it on all sides. Cool the finished eggplant and divide into small pieces.
Step 4
Finely chop the parsley. Cut the bell peppers into pieces of the same size and shape as the eggplant, but after removing the core from the pepper.
Step 5
Next, you need to mix all the prepared ingredients: parsley, rice and mackerel, eggplant and bell peppers.
Step 6
For dressing, combine the juice of one lemon, olive oil, garlic squeezed through a garlic press, and capers, sprinkle everything with the remaining salt and pepper and mix thoroughly.
Step 7
Add the dressing to the vegetable, rice and fish mixture and stir again. Salad ready.
