Basturma soup, at first glance, seems difficult to prepare. But it is prepared very simply, for the soup you do not need to fry it, it is enough to emphasize the flavor range of the main ingredients. Before serving, the soup is garnished with fresh herbs.

It is necessary

  • basturma (can be replaced with other jerky) - 200 grams,
  • round rice - 2 handfuls,
  • wild rice - 1 handful
  • potatoes - 3 pcs,
  • carrots - 1 pc,
  • onion - 1 pc,
  • garlic - 2 cloves,
  • butter - 20 grams,
  • lavrushka - 2 leaves,
  • paprika - 1 teaspoon
  • tomato paste - 1 teaspoon
  • some salt
  • ground black pepper.

Instructions

Step 1

Pour water into a saucepan and put it on medium heat. While the water is heating up, peel the potatoes (3-4 things). Cut the potatoes into medium cubes.

Add the potatoes to a saucepan with boiling water and two leaves of lavrushka, salt a little.

Step 2

Finely chop the basturma (into thin strips or small cubes, whatever you want) and put it in a saucepan with the potatoes. It is quite possible to replace basturma with any other jerky or even smoked meat.

Step 3

Cook basturma with potatoes for about 4-5 minutes and add one guest of wild rice to them. Cook for another 10 minutes and add the round rice (it is better to rinse).

Step 4

Peel the garlic, cut the onion into cubes, carrot into circles.

We transfer the vegetables to a blender and grind, add tomato paste and a little paprika to the vegetable puree.

Step 5

Add the vegetable dressing to the soup five minutes after the round rice, cook for 15 minutes with occasional stirring.

Step 6

Salt the finished soup a little, pepper and add a small piece of soft butter. Remove the pot of soup from the heat. We serve soup on the table in portioned cups. Decorate with fresh dill or parsley.
