Green borscht is a great alternative to the traditional one. The place of beets in it is occupied by sorrel, which gives the dish a completely different taste, with a pleasant sourness. Borscht turns out to be not only tasty, but also healthy. Due to its low calorie content, it fits perfectly into the diet menu.
It is necessary
- -500 g of lean beef;
- - 3 potatoes;
- - 2 small carrots;
- - 3-4 fresh tomatoes;
- - 300 g of sorrel;
- - a bunch of dill, green onions and parsley;
- - 5 chicken eggs;
- - salt to taste;
- - 3 liters of water.
Instructions
Step 1
Wash the meat under running water, cut it into small pieces, place in a saucepan and cover with cold water. You can use chicken breast instead of beef. Put the pot on fire and wait for the water to boil. After that, cook the meat over low heat for 1.5 hours. Do not forget to periodically remove the foam from the surface of the broth.
Step 2
Peel the potatoes and cut them into medium-sized cubes. Peel the carrots and grate them on a coarse grater. Add vegetables to broth.
Step 3
Remove the skins from the tomatoes. To do this, simply immerse them in boiling water for a couple of minutes, after making notches with a knife in the form of a cross. After such a hot bath, removing the skin from the tomatoes will not be difficult. Grate the tomatoes or simply crush them with a pusher. Send them to the broth and cook for 15 minutes after that.
Step 4
Wash the sorrel very carefully and chop it finely. Do the same with green onions, dill and parsley.
Step 5
Boil hard-boiled chicken eggs and chop finely. After the carrots and potatoes in the broth are ready, send the chopped eggs and herbs to the borscht. Season with salt to taste, bring to a boil and remove from heat.
Step 6
