Financiers are small French muffins that are often mistaken for cookies. The cake is similar to a biscuit, only it turns out to be more moist. The main feature of this recipe is the way the butter is prepared - it is fried until it is caramelized. Let's try to make pistachio financiers.
It is necessary
- For twelve servings:
- - 120 g butter;
- - a glass of pistachios;
- - 1/2 cup each wheat flour, sugar, brown sugar;
- - 4 egg whites;
- - 2 tbsp. spoons of almonds;
- - 1 teaspoon of baking powder;
- - a pinch of salt.

Step 1
Grind 0.5 cups pistachios and almonds in a blender until flour.
Step 2
Fry the butter over medium heat in a skillet - it should turn caramel color. Strain the butter into a bowl through a sieve.
Step 3
Combine egg whites with sugar and salt. No need to whip the mass! Add flour and pistachio flour, add baking powder. Mix everything thoroughly. Pour in brown oil, stir again until completely homogeneous. Refrigerate for one hour.
Step 4
Divide the dough into tins for rectangular mini-muffins. Fill 3/4 full as the dough rises in the oven. Sprinkle the financier with the remaining chopped pistachios and bake until golden brown. At a temperature of 180 degrees, it will take you 15-20 minutes, no more. Ready-made pistachio financiers can be served warm or chilled.
