  • For the test:
  • potatoes - 2 large, about 420 grams,
  • warm water - one third of a glass,
  • honey - 2 teaspoons,
  • active dry yeast - 7 grams,
  • white rice flour - 1 cup
  • tapioca starch - half a glass,
  • one large egg white
  • olive oil - 1 tablespoon.

Instructions

Step 1

Put the unpeeled potatoes in a medium saucepan, add water and cook until soft. Cool and remove the skin. We make mashed potatoes through a blender. You should make two cups of mashed potatoes. We put it aside.

Step 2

In a bowl, mix warm water with honey and yeast. We leave it to stand for about five minutes. A little foam should appear on top.

Step 3

Put mashed potatoes with rice flour, starch and half a teaspoon of salt in a mixer bowl with a spatula attachment. Set the mixer to medium speed and mix the ingredients until a crumbly flour is obtained. Continuously stirring, add the egg white and butter. Gently pour in the yeast mixture in small portions. Stir until smooth. Cover the dough with foil and put in a warm place for 90 minutes.
