This recipe is a kind of lighter and healthier alternative to the classic English Bakewell pie. I highly recommend giving it a try!
It is necessary
- - 125 g of canned cherries;
- - 0.5 tsp starch;
- - 25 g of almonds;
- - 1 tbsp. corn flour;
- - 2 tsp sugar + 1 tsp;
- - 1/4 tsp baking powder;
- - 1 egg;
- - 50 g of yoghurt without additives;
- - 1 tbsp. vegetable oil.
Instructions
Step 1
Preheat the oven to 180 degrees. The molds in which we will bake are greased with oil.
Step 2
Sprinkle cherries with starch and put in prepared forms. Sift the cornmeal with baking powder. Add sugar to the mixture, stir. Grind the almonds into flour using a blender or coffee grinder with the addition of 1 tsp. sugar: it will act as an absorbent, preventing the almonds from turning into a thick paste. Add to the rest of the dry ingredients.
Step 3
Mix separately the yogurt with the egg and vegetable oil. Combine in parts with a dry mixture and mix until smooth. Pour into a mold, covering our cherries, and bake for 20 - 25 minutes.
